Eggboat with Avocado, Sausage, and Mozzarella

Is this a totally ridiculous amount of food for one person to eat on a Tuesday morning? Yes. Did I do it? Uh, duh.

Ingredients

3-4 eggs
1 avocado
1 sausage link
2 small fresh mozzarella balls (can substitute any preferred cheese)
2 slices bacon (Optional. But seriously, why not? Benefits of bacon here. That’s right people, bacontoday.com)
1 french baguette
Milk/ cream
Salt
Pepper

Procedure

Preheat oven to 400F or 205C
Quickly cook the sausage on the stove, just to ensure a full cook while in the oven.
Cut sausage into small pieces.
Dice the avocado.
Cut the mozzarella balls into small pieces.
In a bowl, beat eggs and milk until well mixed.
Add sausage, avocado, mozzarella into egg mixture. Add salt and pepper (and other spices) to taste.
Hollow out the baguette (As you can see from the picture above, I had to make makeshift ends to my boat, as did not have a complete french baguette. Improvisation is half the fun!)
Pour in the egg mixture into the baguette “boat” slowly, as to ensure a good seal.
Drop the uncooked bacon slices on the side of the baking pan. It will bake nicely in the same time as the egg boat.
Leave in the oven for 15-20 minutes, accounting for how cooked/runny you’d like the eggs. Watch the bread…it had a tendency to burn. You may want to turn the top heater off half way through the bake.

Remove, plate, and enjoy!!
